Oyster Mushroom Stir Fry

Ingredients:
* 200 gms Oyster Mushroom
* 2 tbsp Olive oil
* 4 garlic cloves
* 2 tbsp soya sauce
* 1 tsp sesame oil
* 1 tbsp fresh/ dried parsley
* Salt & Pepper to taste
Method:
1. Heat oil in a pan, add garlic and sauté for two mins over medium flame.
2. Add Oyster Mushrooms to the pan, keep stirring occasionally, cook until they turn golden color.
3. Add soya sauce, sesame oil, salt and pepper to taste, cook for two to three mins.
4. Finally garnish with fresh parsley and serve hot.

Oyster Mushroom Skewers
Ingredients for Marinade:
*200 gms Oyster Mushrooms
*1 tbsp barbeque masala
*2 tsp soya sauce
*1 tbsp red chilli sauce
*2 tbsp veg oil
*1 tbsp water
*1 tsp vinegar

​Method:
1. Separate mushrooms from cluster and pat them dry.
2. Whisk up all the ingredients in a bowl and add oyster mushrooms, gently toss andthen skewer them and grill.
3. Or, take a large pan. Grease the pan with little oil, place mushroom skewers andcook evenly.

Fried Oyster Mushroom Bites
Ingredients:
*200 gms Oyster Mushrooms
*Breadcrumbs
*Oil for frying
For Batter:
*3/4 cup all-purpose flour
*1/2 cup water
*Salt and pepper to taste
*1/2 tsp cumin powder
*1tsp paprika/ chilli powder
*1 tsp garlic powder
Method:
1. Pat dry oyster mushrooms.
2. Mix all ingredients and make a batter.
3. Dip mushrooms in the batter one at a time, and coat with breadcrumbs.
4. Fry in medium hot oil till golden brown.
5. Serve with sauce of your choice.

Butter Milk fried Oyster Mushroom
Ingredients:
* 200 gms Oyster Mushrooms
* 1 cup butter milk
* Salt to taste
* Pepper – one tsp
* Garlic powder – one tsp
* Onion powder – one tsp
* Chilli flakes – one tsp
* Cumin powder - one tsp
* 1 tbsp oil

Method:
1. Preheat air fryer to 190°C.
2. Clean oyster mushrooms and soak in butter milk for 15 min.
3. Mix flour and all spices in a bowl.
4. Take out soaked mushroom from butter milk and dip each mushroom in flour mix,shake off excess flour.
5. Grease bottom of air fryer and place the mushroom in single layer, brush with little oilon both sides and cook till golden brown.
6. Serve with sauce of your choice.

Creamy Oyster Mushroom Soup

Ingredients:
* 250gms oyster mushrooms
* 1 tbsp butter
* 1 small Onion finely chopped
* 2 garlic cloves
* 1 medium size potato cut into small pieces
* 4 cups veg stock
* 1/2 cup cream
* Salt and pepper to taste
Method:
1. Melt butter in a pan and add onion, garlic and potato cook till soft.
2. Add oyster mushrooms and cook for 5 min.
3. Add veg stock and bring it to boil.
4. Cool the mixture and blend it and add cream, salt and pepper.5. Garnish with coriander and serve hot.

Spicy Oyster Mushroom Salad
Ingredients:
*200 gms Oyster Mushrooms
*4 garlic cloves minced
*1 tsp ginger minced
*2 green onions chopped
*1tsp chilli oil
* 1 tsp pepper
*1 tsp sugar
*2 1/2 tbsp soya sauce
*1 tsp oyster sauce
*1 tsp sesame oil
*1/2 tbsp garam masala
*1 tbsp chopped coriander
*Salt to taste

Method:
1. Shred oyster mushrooms into strips and blanch in boiling water for one min then
drain water and keep aside

Dressing:
2. Mix all the ingredients together.
3. Heat sesame oil and add to the ingredients.
4. Finally, add blanched oyster mushrooms and toss.
5. Arrange in a platter and serve.

Green Herb Oyster Mushroom

Ingredients:
*200 gms Oyster Mushrooms
*1/2 tsp coriander seeds
*3 garlic cloves
*1/4 tsp red chillies
*1 tbsp fresh coriander
*2 tbsp chopped spring onion
*1tsp lemon juice
*Salt and pepper to taste
*3 tbsp olive oil
Method:
1. Shred oyster mushrooms into strips with fingers.
2. Crush the coriander seeds.
3. Slice the garlic.
4. Heat oil in a frying pan.
5. Add crushed coriander seeds and sliced garlic and fry for a min.
6. Add oyster mushrooms and season with salt, pepper, red chilli and fry till they turn
golden brown colour.
7. Remove from the heat and add coriander, spring onions, lemon juice, salt and pepper
to taste.
8. Serve hot.

Oyster Mushroom Salad
Ingredients:
*200 gms Oyster Mushrooms
*2 red chillies
*Extra virgin olive oil
*One small onion thinly sliced
*Salt and pepper to taste
*1 cucumber cut into small cubes
*5 cherry tomatoes
*1/2 avocado cut into small cubes
Dressing :
*1/4 cup extra virgin olive oil
*2 tbsp fresh lemon juice
*1 tsp honey
*Salt and pepper to taste
Mix all above ingredients in a jar and shake well

Method:
1. In a pan take 1 tbsp of virgin olive oil.
2. Heat oil on medium flame and add shredded mushrooms and red chilli and sauté for
2 min and keep aside.
3. Mix all the above ingredients in a bowl, pour the dressing and toss mushrooms and
red chilli in it.
4. Serve in a platter .

Oyster Mushroom Fried Rice

Ingredients:
*200 gms Oyster mushrooms
*200 gms rice cooked
*3 tbsp vegetable oil
*1/2 tsp brown sugar
*1 garlic clove
*1 medium onion
*1tsp chopped ginger
*1 chopped carrot
*1 chopped green onions
*1 tbsp soya sauce
* Salt and pepper to taste
Method:
1. Heat 3 tbsp vegetable oil.
2. Add chopped ginger and garlic, fry for 2 min.
3. Add cooked rice and brown sugar and mix well and keep aside
4. In another pan heat 2 tbsp of oil and add chopped onions sauté till transparent.
5. Add chopped carrot, half green onions and oyster mushrooms sauté for few minutes.
6. Finally mix rice to above ingredients and season with salt pepper and half green
onions.
7. Garnish with remaining green onions and serve hot.

Oyster Mushroom and Spinach coconut milk
Ingredients:
*1 Bunch Spinach
*200 gms Oyster Mushrooms
*2 green chillies
*1 cinnamon
*1 cardamom
*4 garlic cloves chopped
*1tsp ginger chopped
*Few curry leaves
*1 bay leaf
*I medium onion
*2 tbsp oil
*1 tsp mustard seeds
*1/2 tsp fenugreek seeds
*5 black pepper corns
* 1 tsp garam masala powder
*1 tsp coriander powder
*1/2 tsp turmeric powder
*1/2 tsp red chilli powder
*Salt to taste
*300 ml coconut milk

Method:
1. Heat 2tbsp oil in a pan.
2. Add mustard seeds, fenugreek seeds, curry leaves, cinnamon, cardamom, garlic
sliced, chopped ginger, onion slices, green chilli sliced, black pepper and bay leaf.
3. Sauté for few min, add shredded oyster mushrooms and cook for five minutes.
4. Add garam masala powder, jeera powder, red chilli powder, salt, and turmeric powder
and mix all the ingredients.
5. Finally, add coconut milk and chopped spinach and cook till it is done.
6. Serve hot with rice.

Crispy Vegetable and Oyster Mushroom Spring Rolls

Ingredients:
**12 pieces spring roll sheets, thawed into room temp
*Thai sweet chilli sauce or any other dipping sauce
*Oil for frying
Veggie filling:
*2 tbsp olive oil
*1/2 red onion diced
*2 cloves garlic minced
*500 gms shredded cabbage
Can also use a mix of purple and regular cabbage
* 120gms shredded carrots
*100 gms medium bell pepper
*100 gms fresh oyster mushrooms
* 1 tsp salt to taste
*1tbsp soya sauce
* 1/2 tbsp sesame seeds
Method:
1. Heat large pan over medium heat.
2. Once hot, add in 2tbsp oil.
3. Once oil is hot, add onion and garlic.
4. Add in the vegetables, once vegetables are tender, add in the chopped mushrooms.
Mix well and cook for 3-4 min, until the water from vegetables and mushrooms
evaporates.
5. Season with the soya sauce and salt
6. Add sesame seeds, taste the filling and adjust the seasoning according to your taste.
7. Set the filling aside and leave it to cool
8. Add in 2 tbsp of filling at the one end of the wrapper , roll once, and fold the sides
then continue to roll till the end of the wrapper and seal the edge with water.
9. Heat a deep-frying pan with oil enough to submerge the spring rolls, once hot place a
few rolls, cook over medium heat, once both sides are golden brown remove from the
oil
10. enjoy while hot and dip in your favourite sauce.
Baking options:
1. You can also bake. Brush the rolls with some oil before placing them on a lined
baking tray.
2. Bake them in the oven for 40 min at 400 F flipping half way through.
3. Serve hot with the sauce of your choice.

Oyster Mushroom and Tomato Pasta
Ingredients:*200 gms Oyster Mushrooms sliced
*250 pasta (spaghetti)
*2 tbsp olive oil
*3 garlic cloves minced
*4 large, diced tomatoes (blanch in hot water and remove peel the skin)
*1/4 white wine (optional)
*1/2 tsp dried oregano
*Salt and pepper to taste
*1/4 cup grated parmesan cheese
*Fresh basil, chopped for garnish

Method:
1. Cook pasta. Reserve one cup of pasta water, then strain and set aside
2. Heat olive oil in a large skillet over medium heat, add garlic and sauté for1-2 min.
3. Add the sliced oyster mushrooms and cook for 5-7 min until they release their
moisture and turn golden brown.
4. Stir in diced tomatoes, white wine, oregano, salt and pepper. Simmer for 5-7 min,
letting the sauce reduce slightly.
5. Add cooked pasta to the skillet, tossing to combine, if the sauce is too thick add
some reserved pasta water to loosen it up.
6. Serve with a sprinkle of parmesan cheese and fresh basil.

Oyster Mushroom Curry

Ingredients:
*1/2 tsp olive oil
*1/2 tsp cumin seeds
*1/4 tsp fennel seeds
*1/4 tsp coriander seeds
*1 dry red chilli
*1 small red onion sliced
*1/2 fresh ginger chopped
*1 clove garlic chopped
* Little turmeric powder
*2 cups oyster mushrooms
*1/2 tsp curry powder
*1/2 tsp red chilli powder
* Salt to taste
*1/2 cup water
*1 cup cream
Method:
1. Wipe the Oyster Mushrooms tear into bits and set aside.
2. In a frying pan, add the oil, cumin, fennel, red chilli, coriander seeds and sauté till
they are aromatic.
3. Slice the onion, garlic and ginger and add to the frying pan.
4. Add the bay leaf, clove, green cardamom and sauté.
5. Add oyster mushrooms and sauté for a minute.
6. Add salt, red chilli powder, curry powder and sauté well for a couple of minutes.
7. Add water, cover and cook for 5 minutes.
8. Once oyster mushrooms become tender, add cream, coriander leaves and remove
from heat.
9. Serve hot with rice or bread.

Teriyaki Oyster Mushroom and Broccoli
Ingredients:
*200 gms Oyster Mushrooms
*1tsp dark soya sauce
*1tsp corn starch
*1 tsp sesame oil
*1 tsp garlic paste
*4 tbsp teriyaki sauce
*2 cup broccoli
*2 to 3 green onions

Method:
1. Clean mushrooms with damp paper towel and slice length wise in to two.
2. In a bowl add 1 tsp soya sauce, 1 tsp sesame oil, 1 tsp corn starch mix well *Add
mushrooms and toss.
3. Heat pan and add 1 tsp of sesame oil. Add minced garlic, broccoli and marinated
mushrooms. Stir fry for 2-3 min till broccoli becomes soft.
4. Add teriyaki sauce to the pan and stir over veggies till the sauce begins to thicken.
5. Garnish with onions and serve rice or noodles.

Thai Mushroom Curry with Coconut Milk

Ingredients:
*200 gms Oyster Mushroom
*1tbsp olive oil
*2 tbsp Thai red curry paste
*400 ml coconut milk
* Vegetable stock
*1 tbsp sugar
*100gms green beans
*100 gms bean sprouts
*10 to 12 fresh basil leaves
*1 tbsp lime juice
Method:
1. Pat the Oyster Mushrooms dry.
2. Tear oyster mushrooms into large chunks
3. Heat the oil over medium heat in a large heavy bottomed pan.
4. Add mushrooms to the pan and sauté until they are getting golden brown edges.
About 8 min
5. Add curry paste and stir through, cook for 2 more min
6. Add vegetable stock, coconut milk and sugar. Stir and simmer 10 min.
7. Add green beans and lime juice, stir and season with extra sugar and lime juice to
taste and then add bean sprouts, stir and serve.
8. Spoon the creamy sauce, mushrooms and veggies into a bowl and garnish with basil
leaves and additional bean sprouts.
